Long Hours and short pay, A friends sister was a waitress in A diner I use to use and slowly over the years they girls were replaced with Spanish waiters. They weren't paid an hourly wage and had to depend on tips which they had to split with everyone including the owners.
I own a contracting company, been in business 16 years. I'm lucky in that I don't need to chase work. I employ only qualified Tradesmen and pay them well. In return I get top quality work However I know of smaller companies that are struggling because they can't compete with the amount of illegals hired by other smaller companies to do a sub standard level of work.
They literally take the money and run close the company and then just start another when the time comes. They seldom pay taxes and always bump the illegals for the last couple of pay checks.
Over the last couple of years we've had Cranes collapsing, scaffolding collapsing, gas main blowing up and water mains being hit by JCB's. Though not reported in the media The cause was always by untrained illegals doing incompetent work.
Cheap labor is never a good idea. Unless you're the one raking in the cash of their labor.

I prefer to pay by the job - hourly rates make me worry unduly, like watching a taxi meter ramping up when you're short of cash.
