I have never tried fish with sauce - probably the only one not to on here!
I must be a bloody Philistine Charlie.

Must try this! Forgive me this stupid question, but are the potato wedges supposed to be baked first? And if so, plain or spiced?
My apologies for not answering sooner, I hadn’t seen your question.
I baked the wedges first, in a large casserole dish, for about 20 minutes, then poured the beef bolognese on top, spread it out and put cheese on. I used the lightly seasoned wedges but plain would work too I should think.

Thank you! And no worries, there was a long off-topic discussion right after, so I figured you hadn't seen it I loved the genius of potato instead of pasta (and that along with the word 'spiced' may show you I am not a cook and need guidance!). Have all the ingredients ready, was just waiting for your answer, looking forward to trying it tomorrow, thanks again!
