Steak again, with salad.

I have beetroot in the fridge that I'm sick of seeing so might try to use it in some way as a dressing instead of mayo.

years ago we went to malta and we had a lovely yoghourt dip. The chef told me it was just beetroot (diced), natural yoghourt and chopped grapefruit. It was really good and I still make it. Ive even done it with drained tinned grapefruit and its lovely. Obviously its pink but lovely as a dip or on the side with salads and BBQ stuff.

I do a thing with beetroot that we have with roast beef, the not pickled cooked beetroot

beetroot, spoon brown sugar, spoon balsamic vinegar, horseradish sauce (couple of spoons to taste) - I don't measure anything though just bung it in

blend and serve at room temp

it's like a cross between a side and a sauce

Yeah we mix crab with lime juice and dill, sometimes chilli. He has it on a ciabatta, I just have it on rocket.

Your beetroot thing sounds nice, I’ll be trying that.

I have a Persian friend who makes a similar dip but it is just cooked beetroot (not pickled) chopped up very fine in natural yoghurt. It's lovely you would swear it was a really complicated recipe!
