Use my method for dressing a dove which is same as a pigeon.

Cut it longways up the breast and peel out the breasts, wash, dip in seasoned flour of your choice and fry in a bit of butter for 3/4 minutes.have some toast ready, put breasts on it,they will still be cooking a bit.
Sprinkle aa spoonful of flour in the butter juice, add 1 spoonful of port, keep stirring until it cooks out the flour and pour over breasts. I may have needed a little more butter.
Sprinkle with top quality balsamic Modena vinegar

Discard the rest it ain't worth messing with.

If you have someone willing to pluck and draw them then I agree, ain't worth the effort.
The flavourings, herbs you can add takes the place of the bones which is so minimal anyway
