Why do you use ramekins?????????????????????????????????????????????????????????


They retain the heat and keep the egg cooking for a minute or two after you have removed it from the boiling water, just make sure that you butter it before you crack an egg in it :thumbsup:

Poached eggs? Not at all and totally in my top three of ovarian outputs. Great with a lot of pepper :drool:

I think the splitting is about the freshness of the egg, its the only thing I have found will guarantee success or failure when poaching.

I crack the egg or eggs into a small dish, boil the water - no salt or vinegar and remove from the heat. Swirl then tip the bowl with the egg/s into it. I have done upto 3 at a time from the same dish and if they are fresh, they will poach individually in the water. Return to a low heat, remove with a slotted spoon when ready.
