It’s surprisingly filling, you eat a much smaller portion than with the pasta. We are trying to get back into low carb eating and the mushrooms are a good substitute. Cauliflower mash with cream cheese is also a great sub for mashed potato. Sometimes I do sweet potato mash as a topping for cottage pie and it’s really good. Sweet potatoes are meant to be a healthier choice than regular potato, they’re still a carb but their effect on blood sugar is less dramatic.

I do really basic food, the things I make from scratch are butter chicken, meatloaf, and a couple of soups. Sometimes i don’t measure anything , like with meatloaf. I could tell you what I put in it but I’d only be guessing at how much. I’ll think about it. Perhaps the other members and guests would post their favourites too if I did.
