Bought some kebab meat (frozen), picked up some pita breads and salad stuff. So homemade(ish) kebabs tonite. :mrgreen:

Reading Stars post gave me the idea to make one as I love homemade soups.... there are many versions of Mulligatawny soup..... basically, I’ve done a chicken and veg soup using various veg and onions... added chicken stock, some Greek yoghurt, curry powder and Indian spices.... it’s simmering away now, then i’ll add the cooked rice when it’s nearly ready!

It’s a bit of a bung anything in kinda creation :gigglesnshit: .... but if it tastes as good as it smells it should be a winner :mrgreen:

I’ll let you know Keys!! :laughing:

Mulligatawny soup

Good slug of olive oil
1 red onion roughly chopped
1 peeled and roughly chopped carrot
1 deseeded red pepper
6 cloves garlic peeled and sliced
A thumb sized piece of fresh ginger peeled and sliced
A small bunch of fresh coriander chopped
1 red chilli deseeded and chopped
2 Tbsp madras curry powder
1 Tbsp tomato paste
1/2 lb minced beef
2 tins of plum tomatoes
2 cups of beef stock
Salt & black pepper
Yoghurt or soured cream to serve.

1, Place large pot over med heat. Pour a good glug of olive oil in.
Add carrot onion garlic red pepper ginger chilli and coriander and mix until soft and fragrant.
2, Stir in curry powder and tomato paste and mix through.
3, Add beef and stock and tomatoes & salt and pepper.
4, Break tomatoes and mince up with wooden spoon. Bring to the boil, and then simmer for
11/2 hrs .
Serve in warm bowls with a dollop of yoghurt or soured cream.

I don’t because that recipe comes under low carb.
But you can put whatever with it Poca.
