Surely the cost of freezing it outweighs, or at least come close, to the price of it - not to mention the palaver.
Not at all. Freezers run much more efficiently and economically when they are well-filled. I try to keep both freezers well stocked and I have a bread drawer in one of them.
I don't see the point in wasting bread by allowing it to get stale, so we just use what we need. From what I gather, we actually waste relatively little food in this household, compared to others.
