Aubergine completely transforms a dish. I add it to as many recipes as I can. Its taste is so unique.
Some people cannot get past the weird texture and refuse point blank to eat it. :pmsl:

I know what you mean about the texture, I quite like it. I have it with other roast veg and crumble feta cheese on the top, it’s lovely.

The curry is always better the next day so sometimes I make it up the day before. I always make it far hotter than my husband does. Clears the sinuses.

After last nights failed KFC, and ending up with bacon, egg and beans on toast  we’re having an Indian takeaway tonight.
Butter chicken for me! I’m counting down the hours

I do a nice sausage dish..... I put a load of chipolatas in a roasting dish, add diced potatoes, onions, mixed peppers, mushrooms and cherry tomatoes.... season with salt, pepper, dried herbs and drizzle over garlic olive oil.... it’s so tasty  ... any veg could be added, but that is my concoction!
You can't go wrong with such fantastic ingredients (BIB). Asparagus & green beans are my vegetables of choice.

Mexican food is luscious. Even the bland mass-produced mexican food in supermarkets is good, let alone ones with the special home made touch!
:twirl:

The salad was luscious. Black eyed beans, corn, red and green peppers, red onion, tomatoes, oil, vinegar, brown sugar and a pinch of cayenne.

Tonight: ratatouille without the aubergine, mine don't like them.

With chips?? :leer: :leer:

Had Creamy haddock risotto: ''sustainable smoked haddock with spinach & peas in a silky Italian rice & white wine risotto''
Quite nice.
I wonder how it compares with kedgeree as I've never had that.

Tonight I made a Lancashire Hot Pot with plenty of seasoning and thyme, carrots and onions and some half price lamb from aldi.

I did broccoli and peas with it.

5 clean plates. :canny:
