Mouth on fire - the singapore noodles were red hot tonight!!! How I wish I had a cool Bud in the fridge, for I'd break my no drinking for a great big slug of it, right now!

tonight we had chicken thighs in a spicy marinade. broad beans from a neighbours allotment and new potatoes. I also made spicy couscous. I fried garlic, cummin and coriander and paprika in olive oil for a minute. I added 12 fl oz of veg stock and a few strands of saffron. Bring to boil.

I added some sliced spring onions and 8 oz plain couscous. Leave to stand off heat for 5 mins. I left it to cool and put in fridge for an hour then added 2 tablespoons of pomegranate seeds, some raisins and toasted pine nuts and zest and juice of one lemon. It was very nice indeed. Omit the cooling stage and add final ingredients if you prefer it warm.

I fully agree, although once in Jan we found a piece of red plastic 1mmx1mmx6mm dimensions on a Sweet Chilli chicken pizza, I like spicy chicken fillets with the Iceland paella. I do like a mix and match. :cronos:
