My take on Huevos Rancheros tonight. Sauteed potatoes instead of Corn Tortillas, corned beef, onion, garlic and chilli, guac and sour cream, and two fried eggs. Not a big fan of Re-Fried Beans so they've been kicked into touch.....

And i got some Sol beers in honour of the occasion! :canny:
